What Came Into the Kitchen

Nothing new came in today, but first thing this morning at 7 a.m. I ran downstairs and pulled salmon filets out of the freezer…because I forgot to do it last night.

Put them in the fridge and hoped for the best — and thankfully, they defrosted in time.


What I Cooked Today

Lunch Prep

  • Made tuna fish
  • Made my husband a tuna melt sandwich
    • Here’s how we like it: 1 can of drained tuna fish, mayo, dijon mustard, chopped red onion, 1 chopped pickle, dried dill, salt, pepper, and garlic powder. Mix it all up, then spread on a piece of toast, throw it back in the oven to heat for a moment, and serve it with a pickle, lettuce, tomato, red onion, and a drizzle of vinaigrette dressing. 

Dinner (Fish Tacos — Two Options)

I did two types of fish:

  • Salmon filets – Wild Alaskan Company
    • Olive oil, salt, pepper, lemon pepper; roasted at 425ºF for about 10 minutes and it was perfect! Daphne, my 3 year old, especially likes ‘pink fish’
  • Crispy cod filets (Trader Joe’s frozen)

I like having options — it just works better for our family.


Slaw for Tacos

  • Red cabbage + coleslaw mix
  • Red onion
  • Rice wine vinegar
  • Honey
  • Garlic powder
  • Sesame oil
  • Salt, pepper
  • Lemon juice

Mixed it all together for a really fresh topping.


Sides

  • Roasted potatoes
  • Steamed broccoli

Extra Prep (for Tomorrow)

  • Made chocolate popcorn for a full-day meeting tomorrow (I have a reel for this…the basic jist is that you want to pop popcorn, SORT THROUGH IT so you remove any unpeopled kernels, then melt whatever chocolate you like (I used 1 cup dark chocolate, and 1/2 cup semi sweet chocolate…Trader Joe’s has dairy free of both!), I toss it all around, add LOTS of salt, then spread it out on a parchment lined sheet pan to harden. It’s ALWAYS a hit with a crowd.
  • Prepped ingredients to make fresh cowboy caviar in the morning

What We Ate

Lunch

  • Tuna melt (my husband)
  • Black bean + cheese quesadilla with leftover cowboy caviar (my daughter)
  • Leftover pizza (kids — now fully gone)
  • Finished the last of the rice

Dinner

  • Fish tacos (salmon + crispy cod options)
  • Slaw
  • Roasted potatoes
  • Steamed broccoli

Served on:

  • Almond flour tortillas
  • Regular tortillas

Some added:

  • Mayo + lemon

Two of my kids (who don’t eat fish) had hot dogs — and that worked perfectly.

Everything got eaten except for a little bit of potatoes.


Kitchen Flow (How It’s All Working)

  • Pizza → fully finished today
  • Rice → fully finished today
  • Fish → cooked and fully used (both options worked well)
  • Slaw → completely used
  • Potatoes → small amount left for later
  • Chicken → still available and planned for tomorrow’s lunch
  • Pantry/freezer → pulled from both to make the meal work

This is exactly why I like having a mix of fresh + freezer options — even when I forget something, it still comes together.


What’s Next

Tomorrow I’ll be gone most of the day, so:

  • Lunch will be built from the leftover chicken (salads, wraps, sandwiches) – good luck to my husband.
  • I’ll make fresh cowboy caviar in the morning to bring with me to my all day meeting along with the chocolate popcorn.
  • Dinner is at my parents’ house (which I am very grateful for after a long day)

Heading into the weekend, we’re in a good spot — food is prepped, nothing is going to waste, and meals will be easy. I’ll restock on Sunday at Costco!
