Saturday: Weddings, Cocoa Krispies, and a Backup Dinner Plan
This morning started with a very important event:
The delivery of Cocoa Krispies!!!
I also had a big Walmart grocery order arrive, and after what feels like months of lobbying efforts, my kids finally succeeded in convincing me to buy Cocoa Krispies.
So breakfast looked like:
- Fresh bacon
- Cocoa Krispies for the kids who wanted them
- A generally relaxed Saturday morning
I have to admit, there was quite a bit of excitement over a cereal purchase!
Splitting Up for Lunch
Today was a little unusual because Chris and I were attending a wedding.
Right before lunchtime, Chris dropped the kids off at my parents’ house, so they had lunch over there.
Meanwhile, we ate an early lunch at home before getting ready.
I kept mine simple:
- Chicken thighs
- Broccoli
- Watermelon
Chris finished off some leftover spaghetti.
Nothing fancy, but enough to keep us going for the afternoon.

We headed to the wedding at 1pm, then met up with the kids at our regular 3:30PM vigil Mass

Wedding Strategy with Food Allergies
We had some time to kill before the reception so we grabbed a drink at a local brewery.

One thing I’ve learned over the years is that when you have multiple food allergies, it’s often smart to have a backup plan.
I never expect a wedding or event to accommodate gluten-free, dairy-free, and egg-free needs. That’s a lot to ask of a host who is already managing a huge event.
So before the reception, Chris and I stopped at Cava and split a bowl.

It was basically insurance.
That way, if there wasn’t much I could eat later, it wouldn’t matter.
I wouldn’t be hungry, cranky, or trying to figure out dinner at 8:00 at night.
A Pleasant Surprise
There were several things I could eat at the wedding:
- Roasted potatoes
- Roasted vegetables
- Chicken
So I ended up having a perfectly good dinner after all.
Of course, the desserts were off-limits for me, but that’s pretty typical.
I was just happy to have a real meal and enjoy the celebration without worrying about food.
Ingredient Household After Dark
When we got home, everyone else was winding down for the evening, but I still wanted something sweet.
Since the wedding desserts weren’t an option, I made what will probably become tomorrow’s Ingredient Household After Dark post.
Think:
Chocolate + peanut butter + crunch bar energy.
It was basically a giant homemade chocolate peanut butter crunch bar situation.
Rich.
Crunchy.
Sweet.

Looking Ahead
Tomorrow should be a much more normal kitchen day.
Current inventory includes:
Proteins
- Fresh Costco ground beef
- Chicken breasts
- Chicken thighs
- Leftover cooked chicken thighs
Extras
- Fresh produce from Walmart and Costco
- Plenty of breakfast foods
I’ll definitely cook all the ground beef tomorrow.v
