Kitchen Log – June 18, 2026

Thursday: Teen Lunch Duty, Surprise Pizza Delivery, and Restocking Chicken

This morning started with a fresh batch of bacon and the final stretch of Fiona’s homemade bagels.

We’re down to just a couple bagels now.

Breakfast was simple:

  • Fresh bacon
  • Homemade bagels
  • Smoothies
  • The usual breakfast rotation

And of course, Daphne helped make a smoothie. At this point, helping with smoothies is basically one of her official household responsibilities.

Then we jumped right into schoolwork.

Daphne added some sprinkles to add a little whimsy to her smoothie this morning!


Grant found this card in the beloved box of Frosted Flakes…he was dazzled by the prize!!

Lunch: Teen in Charge

I had my annual dermatology skin check today, so I was gone through lunchtime.

One of my favorite things about having older kids is being able to leave them with real responsibilities.

Before I left, I gave Fiona a simple assignment:

  • Make chicken nuggets in the air fryer
  • Serve the cut fruit and vegetables I had already prepped
  • Keep everyone fed

Mission accomplished.

She also made herself a tortilla wrap with:

  • Leftover grilled chicken
  • Cheese
  • Avocado salsa
  • Lettuce

By the time I got home, everyone had eaten and nobody was starving. That’s always a win.


My Lunch

I was hungry when I got back, so I used the very last of the grilled chicken.

I sliced it up, added a little barbecue sauce, and warmed it in a skillet.

Since I was completely out of salad greens, I basically made what I would call a “salad without lettuce.”

Just:

  • Cucumbers
  • Peppers
  • Other cut vegetables
  • Simple vinaigrette
  • Barbecue chicken on top

It sounds a little random, but it hit the spot.

And now the grilled chicken is officially gone.


Pool Afternoon

With Chris out of town, I wanted to get the kids out of the house this afternoon, so we headed to the pool.

The pool is one of my favorite summer parenting tools because everybody burns energy, everybody gets sunshine, and it’s one of the few places that keeps Daphne entertained the whole time!

The only downside is that our pool has terrible cell service.

That detail becomes important later.


The Sweetest Pizza Delivery

While we were swimming, my mom was at Costco.

Apparently she had been texting me, but I never saw the messages because of the terrible reception.

She decided it would be nice to buy us a Costco pizza.

And because she is the sweetest, she literally waited in the parking lot for us.

As we walked out of the pool, there she was with a giant Costco pizza.

I mean, come on! My kids are too lucky!


Pizza in the Car

This was around 4:00 p.m., which created a funny situation.

My 11-year-old immediately took over pizza distribution duties and started handing slices out to everyone in the van.

By the time we got home, most of the kids had already eaten what was essentially an early dinner.

So technically:

First Dinner

  • Costco pizza in the car

Rainy Grilling Project

Even though everyone had already eaten some pizza, I still wanted to get the chicken thighs cooked.

I bought them last week and had been planning to tackle them.

So I headed outside and started grilling.

Naturally, it started raining.

At that point, though, I was committed.

Once I’ve already seasoned the chicken, heated the grill, and started cooking, I am not pivoting because of a little rain.

The chicken thighs turned out great and now I have a huge amount of cooked protein ready to use.


Second Dinner

Because of the pizza, nobody was particularly hungry when we got home.

The kids mostly had very small portions and picked at things.

I was the only one who really ate a full dinner.

Mine was simple:

  • Grilled chicken thighs
  • Vegetables
  • Vinaigrette

The kids mostly just had a little extra food to round things out after their pizza.


Looking Ahead

The biggest win today was getting those chicken thighs cooked.

Refrigerator

  • Large amount of freshly grilled chicken thighs
  • A little leftover Costco pizza
  • Fresh produce

I’m also thinking Costco tomorrow might be the smart move. If I can get the shopping done before the weekend, then Father’s Day weekend can actually feel like a weekend instead of a grocery run. Plus, Chris has been out of town all week, so it would be nice to have 2 family days.
