Sunday: Leftover Chick-fil-A Breakfast, Burger Restock Day, and Rainy-Night Ice Cream
This morning started with the last of the Chick-fil-A breakfast that my two youngest daughters brought home after going to Mass and breakfast with my parents yesterday.
I simply reheated the leftovers, added some bacon and fresh fruit, and then called it done!
Lunch: Using Up the Flank Steak
At lunch, I wanted to keep working through the leftover proteins in the fridge.
I sliced up about half of the remaining flank steak from Friday night’s unicorn dinner and reheated it the way I always do:
- Slice it very thin
- Get a pan blazing hot
- Add a small pat of butter
- Toss in the steak
- Let it sit for a minute before stirring so the edges can develop a little color
The goal isn’t to cook it again—it’s already cooked. You’re just warming it through and creating those slightly crispy edges that make leftover steak taste fresh again.
Some of the kiddos had the steak with:
- Veggies
- Fruit
- Pretzels
- Hummus
Meanwhile, my husband and I each made big salads using the grilled chicken thighs.
I used my current favorite salad dressing:
- 2 scoops avocado salsa
- 1 scoop fresh salsa
- Splash of rice wine vinegar
- Drizzle of honey
- Salt and pepper


My teen made herself a grilled chicken wrap.
So at this point we still have:
- Plenty of grilled chicken thighs
- A little flank steak remaining

Afternoon Snack Before Church
Before heading to church, everyone grabbed snacks from the pantry.
Nothing fancy—just easy grab-and-go items that held everyone over until dinner.
Dinner: Burger Restock Night
Tonight was all about building back up the protein stash.
I took the Costco ground beef and made:
24 burger patties
I still have about two pounds of raw ground beef left, which I’ll probably brown tomorrow and add to my freezer stash.
I grilled all 24 burgers this evening.
Alongside them, we had:
- Re-roasted air fryer potatoes from yesterday
- Pasta
- Broccoli
- Watermelon
- Blackberries
Simple dinner, but one everybody enjoys.



How I Reheat Burgers
Someone recently asked how I reheat all these burgers later in the week.
It’s very simple.
I intentionally do not add cheese to any of the burgers I’m storing.
Instead:
- Wrap a burger patty in wax paper.
- Microwave about 20 seconds.
- Add cheese afterward if someone wants it.
I’ve found burgers reheat much better this way. If the cheese is already on there, it tends to melt before the burger is fully warmed, and everything gets a little messy.
Now I have a refrigerator full of cooked burgers that can become:
- Quick lunches
- Burger bowls
- Snack plates
Rain Changed the Evening Plans
We had planned on going to the pool tonight.
Instead, the weather had other ideas.
It started raining, so we pivoted.
Homemade Oreo Ice Cream
I pulled out the ice cream maker and made a batch of homemade Oreo ice cream.
I use the recipe from Our Best Bites:
I churn it in my Cuisinart ice cream maker.
One thing I’ve learned is to keep the freezer bowl stored in the freezer all the time. That way it’s ready whenever we decide we want ice cream.
After churning, I folded in crushed Oreos and popped it into the freezer while everyone took showers and baths.
Ending the Day
Instead of swimming, we ended the evening with:
- Homemade Oreo ice cream sundaes
- A family game of Clue
Honestly, not a bad backup plan for a rainy summer night.


My teen made a little microwave single serve cake to go with her ice cream. She used this recipe and said was delicious!
Chocolate Mug Cake
Ingredients
- 4 tablespoons all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon cocoa powder
- ¼ teaspoon baking powder
- Pinch of salt
- 3 tablespoons milk
- 2 tablespoons melted butter (or neutral oil)
- ¼ teaspoon vanilla extract
- 1 tablespoon chocolate chips (plus extra for topping, if desired)
Instructions
- In a large microwave-safe mug, stir together the flour, sugar, cocoa powder, baking powder, and salt.
- Add the milk, melted butter, and vanilla extract. Stir until smooth.
- Fold in the chocolate chips.
- Microwave for 60–75 seconds, until the top looks set but still soft in the center.
- Let cool for 2 minutes before enjoying.


Going Into Tomorrow
Current protein situation:
Fridge
- Grilled chicken thighs
- Remaining flank steak
- cooked burger patties
And I still have about two pounds of raw ground beef waiting to be cooked, so we’re heading into the week with plenty of options.
