Single Serve Chicken Alfredo

This recipe exists because sometimes one person is hungry right now and doesn’t want to make a giant production out of it. As a mom of five, I cook in bulk constantly, but I also think there’s value in having quick single-serve meals that help older kids learn to feed themselves well. 

The sauce comes together quickly, the broccoli adds freshness and texture, and leftover chicken turns it into a genuinely satisfying meal. I especially love recipes like this for using up random bits of leftover pasta and protein in the fridge. It feels comforting and homemade without requiring a huge amount of time or cleanup.

Single Serve Chicken Alfredo

Servings 1 serving

Total Time 10 minutes

Ingredients
  

  • ½ tablespoon butter
  • cup heavy cream
  • ½ teaspoon garlic powder
  • ½ teaspoon Italian seasoning
  • cracked pepper
  • ¼ cup parmesan cheese
  • ½ cup chopped uncooked broccoli
  • cup chopped cooked chicken breast
  • cup cooked pasta

Instructions
 

  • Heat a skillet over medium low heat.
  • Add the butter, heavy cream, garlic powder, Italian seasoning, cracked pepper, and parmesan cheese.
  • Stir until melted, then add the broccoli. Let this cook until the broccoli is tender crisp.
  • Add the chicken and pasta, stir to heat through.
  • Place in dish and top with more parmesan cheese!
