Morning — The Flat Tire Changed the Plan
Today was our first full day home from vacation.
Originally, my plan was:
- get home Thursday night
- wake up Friday
- immediately go to Costco first thing in the morning

But the flat tire situation yesterday completely changed the timeline because the first tire appointment Costco had available was this afternoon.
So instead of starting the day with a fully stocked fridge, I had to pivot and figure out:
how do I feed everyone before the Costco reset happens?
Thankfully, I still had:
- frozen bacon
- leftover bagels from vacation
So breakfast was easy:
- bacon
- bagels
Freezer breakfast insurance saved me again.
Lunch — “We Have Nothing” Lunch
This was one of those classic moments where it FEELS like there’s no food in the house…
…but when you actually start looking around, there’s enough to pull together a solid meal.
So lunch became:
- boxed mac and cheese
- plain flamingo-shaped pasta from Pastabilities
- Teton Polish sausage crisped on a sheet pan
- cucumber
- red pepper
- cinnamon raisin bagels from my mom
- apple slices
- cutie oranges

And everybody ate really well.

For myself, I made a salad using:
- the last random vegetables
- a can of tuna

This is exactly why I like keeping:
- pantry staples
- frozen proteins
- random “backup” ingredients
Because even after a full week away from home, there’s usually enough to bridge the gap until grocery shopping happens.
Afternoon — Costco in the Rain on a Spare Tire
This afternoon I took my three-year-old and newly 11-year-old to Costco for:
- tire repair
- full restock mission
And let me tell you:
driving to Costco in the rain on a spare tire was stressful.

The entire drive I was basically praying:
“Lord, please let us make it there safely.”
Thankfully we did.
I handed my keys over to the tire department…
…and then made the mistake of having extra time to wander Costco while waiting.
Which, frankly, is dangerous.
Especially:
- post-vacation
- empty fridge
- freezer restock mode
- kids with me
- nowhere else to be
So naturally the cart became enormous.
We even bought a birthday toy for Daphne that I’m hoping to quietly stash away if she forgets about it.

Costco Restock — Protein Rebuild
Today’s Costco trip was mostly about rebuilding my freezer and protein stash after using so much “dinner insurance” during vacation.
Protein haul:
- ground beef
- flank steak
- chicken breast
- chicken thighs
Plus:
- produce
- dairy
- fruit
- restock basics
At this point, I’m already mentally planning tomorrow as a major protein prep day because I really prefer having:
- cooked meat ready
- freezer meals
- prepared proteins
- backup dinner options
Especially after a trip where we used so much of it successfully.
Dinner — Dinner Insurance Saves the Day Again
By the time we got home from Costco, I had that familiar feeling of:
“I just bought all this food… and now I’m too tired to cook any of it.”
Which is EXACTLY why freezer dinner insurance exists.
Thankfully, a few weeks ago when chuck roast was on sale at Costco, I cooked extra and froze portions of it in the juices.
So tonight’s dinner became:
- reheated chuck roast
- roasted potatoes from yesterday
- huge sheet pan roasted vegetables
- naan bread from Costco
- fresh watermelon
The chuck roast reheats beautifully because it stays packed in all the juices.
And the best part:
I didn’t have to touch a single piece of raw meat tonight.


That is tomorrow’s project.
Post-Dinner / Looking Ahead
What’s stocked and ready now:
Fresh ground beef
Flank steak
Chicken breast
Chicken thighs
Chuck roast leftovers
Frozen bacon stash
Fresh produce
Watermelon
Naan bread
Dinner insurance partially rebuilt
And after today’s Costco trip, I finally feel like the kitchen is moving out of “vacation recovery mode” and back into normal life again.
