What Came Into the Kitchen
Nothing new came in today.
But…we officially ran out of bacon this morning, which means it’s going back on the list for tomorrow
(We are very much a bacon or sausage-every-day family over here.)
What I Cooked Today / What We Ate
Breakfast
- Finished the last of the bacon
- Toast
- Kids tell me we need to make some homemade biscuits and cinnamon rolls for the holiday weekend…so we’ll be doing that!
Lunch
- Taco meat (from yesterday) in different forms:
- nachos
- taco platters
- taco salad (me)I ALWAYS keep a paper towel inside produce containers and turn them upside down. I change out the paper towel every time I open the container and I’ve noticed it really helps to make the produce last longer.
About half the taco meat is gone now.
Snack Prep
- Cooked a batch of homemade beef summer sausage that I prepped yesterday and it cured in my fridge last night
- Had some of that for a snack with one of my kids
- Plus a surprise Chick-fil-A snack from my mom (which the kids were very happy about)

Dinner (Grilled Flank Steak Night)
Used the flank steak I prepped yesterday.
Tip: I like to pull steak out of the fridge 30–60 minutes before grilling so it can come closer to room temp — it cooks much more evenly.
Grilled both versions:
- One plain (medium well)
- One with the more seasoned marinade (medium rare)After grilling I set them both on a big sheet pan and covered with some foil to let the meat rest before slicing it against the grain.
- I had a little grease flair issue…but it all worked out and steak was great!

Sides
- Re-roasted leftover potatoes from Sunday
(you can absolutely roast potatoes again — they crisp back up great) - Roasted broccoli:
- bacon grease + avocado oil
- smoked paprika, garlic powder, salt, pepper
- splash of liquid aminos

- Corn on the cob
(some ate it off the cob, some had it sliced off — we make it work based on all the dental needs #braces)We ate outside on the deck, which was really nice. - The steak was a big hit — not much left (maybe enough for a couple lunches).

Kitchen Flow (How It’s All Working)
- Taco meat → about halfway used, will come back later this week for probably a snack
- Flank steak → fully cooked, mostly eaten (planned ahead yesterday)
- Leftover steak from my parent’s house
- Potatoes → fully used up
- Chicken → still available for tomorrow (will use it for dinner)
- Summer sausage → fresh batch started for snacks/lunches (I’ll freezer some of this for next week)
- Bacon → officially out → restock tomorrow
This is one of those days where a little prep from yesterday made today really easy.
What’s Next
Tomorrow will be a leftover-focused day.
I still have:
- Grilled chicken
- Taco meat
- A little steak
I’ll build dinner around that instead of cooking something new….and also we’re going to start baking some Easter weekend treats!
