What Came Into the Kitchen
I did a small Walmart order today — nothing major, just a few things to set us up for the weekend:
- Hot dog buns (I already have hot dogs in the freezer)
- A few things for s’mores for a bonfire tomorrow night
I’ll do a bigger Costco trip this weekend.
I also stopped at a Trader Joe’s when I was out dropping off my teen tonight. I didn’t have a cooler with me, so I couldn’t buy anything fresh or frozen….but that didn’t stop me from buying stuff! I used a basket to limit myself….but when I saw the BELOVED ‘flower cookies’ I did get 5 BOXES! A few of my kiddos look forward to these cookies each spring and you need to grab them when they are in stock! I also bought some dairy free chocolate and their ‘World’s Smallest Chocolate Chip Cookies’.

What I Cooked Today
Today was a no-meat Friday for Lent, so everything stayed simple.
- Baked frozen cheese pizza for lunch (from Costco)
- Cooked two types of fish for dinner:
- Crispy fish sticks (Trader Joe’s — my dad brought these over recently)
- Wild Alaskan Company cod (thawed overnight)
For the cod, I kept it really simple because the quality is so good:
- Glass pan + olive oil
- Salt, pepper, lemon pepper
- A little dill + fresh lemon juice
- Broiled until the top was crisp, then finished at 350°F if needed
Honestly, the fish was so fresh — zero fishy smell even after thawing. Really, really good.
- Made a pot of rice to go with dinner
What We Ate

- Cheese pizza
- Veggies + dip
- Fruit
- I had some tuna fish over a salad since I can’t eat the pizza…I also sent tuna fish for my husband’s lunch. Did some sides with hummus, pita chips, veggies, nuts, and olives
Simple and easy.

Dinner
- Broiled cod
- Fish sticks
- Rice
A couple of my kids opted for leftover pasta instead, which worked perfectly.
We also finished off the rest of the roasted veggies from earlier in the week.

Tomorrow we’re planning a bonfire night, so we’ll do hot dogs and s’mores.
I’ll also be doing a bigger Costco run this weekend to reset the fridge for the next week.
This was a good reset day — using what we had, keeping things simple, and getting ready to build back up again.
