Current Fridge Protein & Leftover Inventory (Start of Day)

  • Leftover burgers
  • Cooked ground beef (plain, ready to season)
  • Homemade beef summer sausage (curing — cooking tomorrow)
  • Leftover rotisserie chicken (small amount)
  • Boneless skinless chicken thighs (raw — cooking tomorrow)
  • 1.5 tubs of Goodfoods avocado salsa

Morning

Made a fresh batch of bacon (gotta start Monday with the hits!)

  • Served the bacon with bagels and some smoothies (still have my smoothie helper who loves to make it, but it’s a ‘little’ loud!)

Lunch — Hot Dogs and a FUN teen lunch

My 4 younger kiddos had a hot dog lunch today

  • Served the hot dogs with fruit, pretzels, and sliced veggies – easy! I don’t do hot dog lunches often, but sometimes you just want to hit the easy button and my kids LOVE the lunchMy teen wanted a fun lunch, so we whipped up a super quick and easy ‘Spanish rice’. Now this is NOT the classic slow cooked version, but I’d argue it ‘might’ be better since it’s so EASY!
    • I filmed this as a reel, but I’ll give you the recipe right now…I’ll post the reel later this week
    • Ingredients: 3/4 cup cooked ground beef, 3 heaping tablespoons salsa, 1 cup leftover cooked rice, dashes of smoked paprika, cumin, garlic powder, salt, and pepper
    • Sauté everything and just get it heated up…then top with a little sprinkle of shredded cheese, crushed tortilla chips, and some guacamole or avocado salsa!
    • She LOVES this lunch and it is SO teen friendly…don’t even need to chop food!

Afternoon Snack – UberEats Freebie!!!

Somehow my husband got us a credit card that has a $15 UberEats credit each month. It was about to expire for April, so I today was the day to use it!

After a quick library trip, I went on the app and ordered an UberEats pick up from Wendy’s! FIVE junior Frosties plus 2 large French fries….FREE! We don’t do this often, but in my opinion, the Junior size Wendy’s Frosty is such a great size and price!

Kids also had a half burger each at home for a little protein boost.

I also had a little snack today. Whenever we have any empty container of peanut butter I like to add some chopped apples, pecans, cinnamon, honey, and salt. Toss it around and enjoy!


Dinner

  • Pre dinner prep: I cooked the homemade smoked summer sausage that I prepped yesterday. My family LOVES this and I basically don’t have to buy salami anymore. One log will be used this week and one log will go in the freezer
  • Dinner: I took apart the 3 pack of chicken thighs from Costco. Half turned into my loaf pan chicken and the other half is marinated in my fridge and ready to grill later this week (probably tomorrow)
    • Loaf pan: I added some olive oil, salt, pepper, garlic powder, smoked paprika, and Italian seasoning, then layered the boneless skinless chicken thighs in a loaf pan and baked at 400ºF for about 40 minutes till internal temp was 165ºF.

  • I served the loaf pan chicken with roasted vegetables, pasta, and a homemade vinaigrette dressing

    • I made both gluten and gluten free pasta…This Trader Joe’s Lentil pasta is my FAVORITE!

Post-Dinner / Looking Ahead

What’s in the fridge now:

  • Leftover burgers (just a few left)
  • Cooked ground beef (used some for the Spanish rice, but still a decent amount)
  • Homemade beef summer sausage (cooked and ready to use this week!)
  • Leftover rotisserie chicken (very small amount, I used most of this for my lunch today)
  • Boneless skinless chicken thighs (gone! Sent it with Chris for his lunch today)
  • 1.5 tubs of Goodfoods avocado salsa

Tomorrow:

  • Grill the chicken thighs
  • Probably making some banana bread and banana oat cookies because we have A LOT of bananas that are about to go bad
