Beef Barbacoa Bowls Family Dinner

Ingredients

  • 3 lbs. cooked chuck roast
  • Juice of 1 orange
  • Juice of 1 lime
  • ½ cup beef broth
  • 1 teaspoon apple cider vinegar
  • 2 teaspoons salt
  • 2 teaspoons garlic powder
  • 1 tablepoon cumin
  • 2 teaspoons oregano

Instructions

  • Break up the cooked chuck roast into large chunks on a half sheet pan.
  • Mix all the ingredients (except the beef) in a bowl.
  • Pour the mixture on top of the beef.
  • Roast at 400ºF (tossing everything once) for about 15 minutes until the edges of the beef are just starting to crisp.

Notes

Serving Suggestion: We like to eat this on top of rice with cooked peppers/onions, cheese, guacamole, salsa, and chips!
